The Piña Colada was invented by “Mochito”, a bartender at the Caribe Hilton in 1954. Fast forward to 2024 and indulge in this fusion of cheesecake and a tropical cocktail.  
 
The crust is a coconut cookie crumb with macadamia nuts for some crunchy tropical goodness. For the  filling, we begin with fresh golden pineapples and cream of coconut. And what would a Piña Colada be without some good Caribbean rum.  And to finish things off, we’ll add a smooth pineapple rum glaze and toasted coconut flakes to the top.
